    Power-Packed Breakfast is Key for Power Shopping!

    As soon as we’ve washed the dishes and refrigerated the leftovers, my aunts, cousins and I will break out the Black Friday ads!  There will be newspapers from the two nearest trade centers, and we’ll swap sections until we’ve reviewed, analyzed and compared every price.  We’ll share what’s on our kids’ wish lists and drop hints about what we’d really like someone to buy for us.  Of course, we’ll have to decide the order of stores we’ll visit since they open at different times; it’s imperative that we strategically plan how to get to each store in time to get the best buys.

    Another key to a productive shopping day is eating a high energy, power-packed breakfast.  High energy is practically synonymous with high protein, low sugar food.  Make use of left-over Thanksgiving dinner by cooking up an egg white omelet with turkey, cheese and mushrooms. (Omelets are super quick and easy, so you can get to the mall sooner!)  Another quick and easy idea is to top off a bowl of instant, high-fiber oatmeal with cranberries.  Complex carbohydrates like this provide your body with much needed morning fuel without causing rapid shifts in insulin levels like simple carbohydrates do, according to eHow’s “How to Eat a High Energy Breakfast.”

    Honestly, I’ll probably eat breakfast on the run this Friday.  I’ll most likely grab a protein bar and a cup of vanilla-flavored coffee on my way out the door.  Then I’ll eat a handful of smoked almonds around 10 a.m. as I’m driving between stores.  Black Friday is all about optimization, Baby!

    Bridal Luncheon Favorites

    Latham Hi‑Tech Seeds, which has been family-owned and operated for more than 60 years, is deeply rooted in tradition.  Tradition, as defined by Merriam-Webster, is a customary pattern, thought, action or behavior that is handed down from generation to generation.

    With this in mind, it’s only fitting that we would take time during the week of our annual dealer meeting to celebrate another time-honored tradition — a bridal shower. While it was a crazy week, I couldn’t think of a better reason to take some time to slow down and enjoy company. Okay, so slowing down wasn’t really in the picture as you can see by the number of recipes that I made, but I was in good company!

    The guest of honor at our bridal luncheon was Laura Larson, marketing coordinator for Latham Hi‑Tech Seeds.  Laura was instrumental in helping plan the ladies programming during our Dealer Kickoff.  When you consider she was working long hours planning company events all the while she was planning her own wedding, she definitely deserved some pampering.

    Menu items at the shower included chicken salad sandwiches served on croissants, frozen fruit salad and a crisp vegetable salad.  Recipes for all three are included below.  We hope these perfect-for-summer foods will help create a few happy memories in your home!

    Happy memories are also what we wish for Laura and her fiancé, a Latham® dealer (further evidence that he’s one smart cookie!).  The two of them will exchange their vows tomorrow.  Congratulations and best wishes, Mr. and Mrs. Cunningham!

    Summer Chicken Salad

    Ingredients:

    • 8 chicken breasts
    • 2 c. bow tie pasta
    • 2 c. seedless grapes
    • 1 c. celery, diced
    • ½ c. slivered almonds
    • ½ c. shredded Parmesan

    Dressing:

    • ½ c. Miracle Whip
    • ¼ c. Vidalia onion vinaigrette
    • ¼ c. Ranch dressing
    • 1 T. curry

    Directions:

    1. Season chicken breasts with salt, pepper, and garlic and then broil until done. Cut chicken into bite-sized chunks.  Cook pasta according to directions.  Mix chicken, pasta, grapes, celery, almonds and cheese.
    2. Mix together salad dressing ingredients and toss in chicken mixture.  You may need to add more dressing, depending on how big your chicken breasts were and how moist you like your chicken salad.
    3. Top with a leaf of Romaine lettuce.

    *For a new twist, try serving this chicken salad in a waffle cone.  It also tastes delicious when served on a bagel or in a croissant.

    Vegetable Salad

    Ingredients:

    • 1 bag of frozen California Mix vegetables, parboiled
    • 1 can black olives, drained
    • 1 can green olives, drained
    • 1 can mushrooms, drained
    • 1 c. diced tomatoes
    • ½ c. chopped onion

    Dressing:

    • 1 package of dry Hidden Valley Ranch
    • 2/3 c. oil
    • ¼ c. vinegar

    Directions:

    Mix all of the vegetables together and pour dressing over the top.  Refrigerate for two hours before serving.

    Chocolate Zucchini Bread

    One of my favorite things about summer is the abundance of fresh fruits and vegetables.  I enjoy adjusting our menus to incorporate whatever is in season, and right now, that means zucchini! Try out this delicious recipe for Chocolate Zucchini Bread.  While it’s baking, your kids can try out the Corn Putty recipe below for a few minutes of fun!

    Corn Putty

    Play with it like clay, then watch it become liquid again!

    • 1 cup cornstarch
    • 1/4 cup water + 1 tablespoon water
    • Food coloring

    Blend mixture with fork. It should flow when the bowl is tipped but feel solid when you touch it. If it’s too thick, add a little water. If it’s too runny, add a little cornstarch.

    Memorial Day Weekend Recipes

    This week, I wanted to share recipes that are quick and easy, leaving you more time to enjoy with family and friends this holiday weekend.


    Saturday Lunch

    First, in response to my request for recipes showcasing eggs beyond breakfast, I was sent the following recipe for Mexican Egg Salad Tacos. I haven’t yet taste-tested it, but I must say it intrigues me. It sounds quick and easy – perfect for a Saturday meal in between baseball and softball games. Pair it with fresh fruit and Mexican Fruit Dip, and you have a “fiesta al instante!”

    Mexican Fruit Dip

    Ingredients

    • 1 package (8 oz) cream cheese (not fat free)
    • 1 T. vanilla instant pudding (dry)
    • 1 tsp. vanilla (Mexican or McCormick)
    • 1 c. brown sugar
    • 1/4 c. half & half
    • 1/2 package toffee chips

    Directions

    1. Mix and serve with fruit. It’s especially good with fresh strawberries, pineapple and bananas.

    Sunday Dinner

    I also wanted to share a recipe for Mock Prime Rib. This is one of my favorite fix it and forget it meals, giving you time to enjoy your holiday weekend!

    Mock Prime Rib

    Ingredients

    • 2 to 3 lbs. rump roast
    • 1 (14 1/2 oz) can beef broth or Campbell’s Beef Consommé
    • 1 pkg. Good Seasons Italian dressing mix
    • 1 pkg. Schilling’s Au Jus mix (1 oz)

    Directions

    1. Place roast in crock pot.
    2. Mix broth, Italian dressing mix and Au Jus mix.
    3. Pour over roast.
    4. Cook on low setting 8-10 hours.

    To serve, remove roast and slice 1/2-inch thick. Serve broth as Au Jus.


    Memorial Day Barbeque

    May is also National Beef Month, and with Memorial Day the unofficial start to the summer grilling season, I wanted to share a favorite recipe of mine. This teriyaki marinade makes grilled steaks especially succulent. Add a couple of your family’s favorite side dishes and you have a Memorial Day barbeque!

    Teriyaki Marinade

    Ingredients

    • ½ tsp. garlic sauce
    • 1 T. brown sugar
    • ½ tsp. ginger
    • ½ tsp. black pepper
    • 1 T. oil
    • 2 T. water
    • ¼ c. soy sauce
    • ½ tsp. Accent

    Directions

    1. Mix all ingredients together.
    2. Pierce meat every inch or so with meat fork; place in covered container with marinade sauce. Turn occasionally.
    3. Soak overnight or for at least 12 hours.

    National Soy Foods Month – Edamame Recipes

    Edamame or soybeans are a nutritional powerhouse. Good friends of mine shared the below recipes incorporating edamame and they were too delicious not to share. Let us know what you think of them, or, tell us how you edamame!

    Edamame Dip with Pita Chips

    Makes 6 servings

    Ingredients

    • 3 pita bread rounds (preferably pocketless), each cut into 8 wedges
    • 5 tablespoons olive oil
    • Salt
    • 1 large onion, chopped
    • 4 garlic cloves, minced
    • 4 tablespoons chopped, fresh parsley
    • 1 package (16 ounces) frozen shelled edamame
    • 1 cup vegetable broth
    • Ground pepper to taste

    Directions:

    1. Preheat oven to 350 degrees.
    2. Scatter pita on a baking sheet. Drizzle with 1 tablespoon oil. Sprinkle with salt.
    3. Bake until crisp, about 15 minutes. Cool.
    4. Meanwhile, heat 2 tablespoons oil in a heavy large saucepan over medium heat. Add onion. Cook until softened, about 8 to 10 minutes. Stir in garlic. Stir until fragrant, about 1 minute. Add edamame and broth. Bring to a boil. Reduce heat and simmer until beans are tender, about 8 to 10 minutes. Cool slightly. Drain, reserving 1/2 cup cooking liquid.
    5. Transfer beans and 1/4 cup cooking liquid to blender. Add parsley. Blend until pureed. Add remaining 2 tablespoons oil. Process until smooth, adding more cooking liquid to reach desired consistency. Season generously with salt and pepper.
    6. Serve with pita chips.

    Food Fit for March Madness

    One of our Field Position readers submitted the following recipe as an idea on how to use corned beef leftover from St. Patrick’s Day.

    With March Madness underway, this recipe looks like a relatively easy way to feed the masses who might have congregated in front of the Big Screen.

    I have yet to try this one, so I’d love to hear from anyone who taste-tests the Rueben Loaf. Thank you so much to the reader who submitted the recipe!

    Fighting Cabin Fever with Good Food and Fun Activities

    I heard it, too. The whispers that we would get hit with another storm beginning last night. Cabin fever is setting in, so I thought today, we’d try to battle it by recommending a few good activities you can do inside and out.

    To keep you warm on another cold day, I’m also including a good recipe from allrecipes.com.  I figure if Mother Nature’s going to keep us cooped up anyway, we may as well fight back with good food!

    Stay warm this weekend and let us know if you liked the recipe and if the activities helped keep cabin fever at bay for another day.

    Indoor Activities:

    • Build a fort – grab some blankets and get to building. Heat up some marshmallows and chocolate in the microwave and make indoor s’mores. They may not have the magic of the fire, but your kids will still smile when they take a bite.
    • Cook – kids love to get their hands into new activities. Have them help plan the menu, as well as make the food. It will definitely be messy, but it should help keep them entertained for another hour.  And, we know how precious 60 minutes can be!

    Outdoor Activities:

    • Snow Painting – take a few water bottles with squirt tops and pour food coloring into the bottle. That’s all it takes. Let the kids go out and paint the snow!
    • Sledding – a classic, and it’s great for getting the kids (and parents) a little exercise during the winter months.

    Mother Nature’s not letting up: A hearty meal for cold days

    I heard on the news today that we’ve received the same amount of snow already this winter that we would normally receive in an entire season!

    The one good thing about snowy days is that I get in the mood to bake and cook, so this winter has provided me with plenty of opportunities to do just that!  Today – as local schools are closed again and all community activities are being cancelled – I thought it would be fitting to share one of my favorite recipes to make when the snow starts piling up.

    Making a hearty meal and then spending time with my family, watching a good movie or playing games, helps brighten my spirits.  If we’re really lucky, it might get warm enough for us to hit the nearby sledding hill.

    I hope you enjoy these recipes and some quality family time, too.

    Buttery Corn Bread

    Ingredients:

    • 2/3 cup butter or margarine softened (I use butter)
    • 1 cup sugar
    • 3 eggs
    • 1 2/3 cup milk
    • 2 1/3 cup all purpose flour
    • 1 cup cornmeal
    • 4 1/2 teaspoons baking powder
    • 1 teaspoon salt

    Directions:

    1. Cream butter and sugar, Combine eggs, and milk. Combine dry ingredients; add to creamed mixture alternately with egg mixture.
    2. Pour into a greased 13 x 9-inch baking pan. Bake at 400 degrees F for about 22-27 minutes or until toothpick inserted near center comes out clean.
    3. Cut into squares; serve warm.

    Honey Butter

    Ingredients:

    • ¾ c. butter, softened
    • ¼ c. honey

    Directions:

    1. Cream butter and honey.

    Summer Picnics

    There’s nothing better than a summer picnic! I love being outdoors, enjoying beautiful weather and the company of family and friends. I especially enjoy listening to bullfrogs croaking, birds singing and kids giggling?or shrieking with delight as they chase one another with water balloons and squirt guns.

    I also think summer picnics are a good opportunity to branch out from the standards: fresh fruit, potato salad and baked beans. I wanted to make use of fresh vegetables from our garden, too. So this weekend I served something new that was a real hit with my family and friends.

    April is Soy Foods Month

    April is Soy Foods Month, so we’re featuring soy menu items on our blog. All of them have been taste-tested by yours truly. In fact, I liked the Crisp Summer Salad so much that I’m planning to make it for our family’s Easter dinner. It’s certain to be a conversation piece!

    The tofu-stuffed pasta shells, edamame and corn salad and chai soy latte all earned rave reviews last week at the 2009 Iowa Soy Day on the Hill. One goal of our March 31 visit to the Iowa Statehouse was to showcase the variety and value of soy products, as well as the value of services offered by the Iowa Soybean Association. In addition, the Day on the Hill highlighted the 45th anniversary of the Iowa Soybean Association.
