Pumpkin Pie with Soy Milk

Ingredients

Ingredients:

  • 3/4 cup Sugar
  • 1/2 tsp Salt
  • 1 tsp Cinnamon
  • 1/2 tsp Ginger
  • 1/4 tsp Cloves
  • 2 Large Eggs
  • 1 can Pumpkin
  • 12 oz. Soy Milk
  • 1 Pie Crust

Instructions

Directions:

  1. Mix sugar, salt, cinnamon, ginger and cloves in small bowl.
  2. Beat eggs in large bowl.
  3. Stir in pumpkin and sugar/spice mixture.
  4. Gradually stir in soy milk.
  5. Pour into crust.
  6. Bake in preheated oven 425° for 15 minutes.
  7. Reduce temperature to 350° and bake for 40-50 minutes more (until inserted knife comes out clean).
