Pork Loin & Vegetables

Ingredients

Ingredients:

  • 2 medium potatoes
  • 2 medium onions
  • 2 cups baby carrots
  • 2 T vegetable oil
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 1/4 pounds pork loin

The rub:

  • 1 T brown sugar
  • 1/2 tsp garlic powder
  • 1/2 tsp pepper
  • 1/2 tsp salt

Instructions

Directions:

  1. Preheat oven to 400 degrees
  2. Cut onions in wedges and dice potatoes.  Add them to the carrots.  Then mix all vegetables with 1 T oil, salt and pepper.
  3. Lay vegetables around the edge of a 9"x13" pan and put in oven.
  4. Use a small bowl and mix all rub ingredients.
  5. Sprinkle rub over loin. Press gently, so the rub sticks to theloin.
  6. Heat 1 T oil in skillet over medium-high heat. Add the loin and brown the sides of meat. Turn after 2-3 minutes per side.
  7. Transfer the pork loin to the center of the pan with vegetables. Bake 40 minutes. Check temperature after 30 minutes.
  8. Remove from oven when meat thermometer reads 145 degrees.  Slice and serve.
