Pork Loin & Vegetables
Ingredients
Ingredients:
- 2 medium potatoes
- 2 medium onions
- 2 cups baby carrots
- 2 T vegetable oil
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 1/4 pounds pork loin
The rub:
- 1 T brown sugar
- 1/2 tsp garlic powder
- 1/2 tsp pepper
- 1/2 tsp salt
Instructions
Directions:
- Preheat oven to 400 degrees
- Cut onions in wedges and dice potatoes. Add them to the carrots. Then mix all vegetables with 1 T oil, salt and pepper.
- Lay vegetables around the edge of a 9"x13" pan and put in oven.
- Use a small bowl and mix all rub ingredients.
- Sprinkle rub over loin. Press gently, so the rub sticks to theloin.
- Heat 1 T oil in skillet over medium-high heat. Add the loin and brown the sides of meat. Turn after 2-3 minutes per side.
- Transfer the pork loin to the center of the pan with vegetables. Bake 40 minutes. Check temperature after 30 minutes.
- Remove from oven when meat thermometer reads 145 degrees. Slice and serve.
