Raspberry Chicken Rolls

Raspberry Chicken Rolls



  • 1 chicken breast per person
  • 1 box frozen spinach
  • Shredded swiss cheese
  • Shredded Parmesan Cheese
  • 1 Egg
  • Bacon (uncooked)
  • Garden Blend Rice
  • Raspberry vinaigrette Dressing (Oak Hill Farms or brand of choice)



  1. Cut each chicken breast in half. If needed pound the breast thinner.
  2. Mix spinach and cheeses in equal amounts depending upon the number of chicken breasts.
  3. Mix in egg.
  4. Place 1-2 Tbsp. of Spinach mixture in each breast half.
  5. Roll chicken breast and wrap with bacon. Secure with toothpick if needed.
  6. Bake at 350° for 1 hour.
  7. If needed, broil a few minutes to crisp up bacon.
  8. Serve on garden blend rice and top with raspberry sauce.

Note: You can make these into bite sized pieced, which would make a great appetizer.
