- 1 small onion, chopped
- 2 cloves minced garlic
- 3 c. chicken broth
- 10-oz can diced tomatoes with green chilies
- 15-oz can black beans (rinsed and drained)
- 1 pound pork sausage, browned and drained
- 15-oz can solid packed pumpkin
- 2 or 3 T. chili powder
- Tabasco to taste
- 2 tsp. dried parsley flakes
- 1½ tsp. dried oregano
- 1½ tsp. ground cumin
- ½ tsp. salt
Instructions
- In a large skillet, brown pork sausage with onion and garlic.
- Stir remailing ingredients in crockpot; add pork sausage.
- Cover and cook on low for at least four hours or until heated through.
- Top with shredded Cheddar or Mexican cheese, salsa, sour cream and tortilla chips.
