Charlie's Brownie Cupcakes

Ingredients:

  • 3 squares unsweetened chocolate, melted
  • 1/2 pound butter
  • 1 1/2 cups coarsely chopped walnuts
  • 4 eggs, beaten
  • 1 3/4 cups sugar
  • 1 tsp. vanilla
  • 1 cup flour

Instructions

Directions:  

  1. Melt chocolate and butter in a double boiler.
  2. Add nuts and mix well.
  3. Beat together eggs, sugar and vanilla.
  4. Stir in flour; add chocolate and nuts.
  5. Mix well.
  6. Bake at 325 degrees for 20-25 minutes.
  7. Cool before frosting.

Cocoa Frosting: 

Ingredients:

  • 1 stick butter
  • 1 cup sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla
  • 3 tablespoons cocoa

Directions:

  1. Combine all ingredients and boil for one minute.
  2. Remove from heat and beat until smooth and stiff enough to frost cupcakes, about 5-6 minutes.

Makes 24 cupcakes.
