Zucchini Bread

Ingredients

  • 1 C. vegetable oil
  • 3 eggs
  • 2 C. sugar
  • 3 tsp. vanilla
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 3 tsp. cinnamon
  • ¼ tsp. baking powder
  • 2 C. grated zucchini
  • 3 C. flour

Instructions

  1. Preheat oven to 325 degrees Fahrenheit.
  2. Grease either two large (8x4-inch) loaf pans or four small loaf pans.
  3. Cream together eggs, oil, sugar, vanilla; fold in zucchini.
  4. Mix dry ingredients; gradually add to dry mixture to creamed ingredients.
  5. Bake at 325 degrees for 1 hour or until toothpick inserted into the center comes out clean. Cool 10 minutes before removing from pans; place on wire rack.

NOTE: If you’re using frozen zucchini, thaw it first and drain the juices.
