Gluten Free Fruit Pizza




1 egg

¼ C. oil

¼ C. packed brown sugar

Beat together.

Add ½ C. peanut butter

¼ t. cinnamon

½ t. baking soda

Mix together.

Add 1 ½ C. quick cooking oatmeal

Spread onto parchment lined pan.  Preheat oven to 375 degrees Fahrenheit.  Bake in oven for 12 minutes.  Will continue to cook after removal from oven.


3 ounces cream cheese, softened

½ (6 ounces) vanilla yogurt container

Mix together in a bowl. Spread onto pizza crust when cool.  Top with desired fruits.


Raspberries – Blueberries – Kiwi – Strawberries – Blackberries – Peaches – Grapes, Etc.

Chill, slice, serve & enjoy!
