White Chili


2 chicken breasts

1 can black beans, rinsed

1 can corn, undrained

1 can rotel, untrained

1 pkg ranch dressing mix

1 tsp cumin

1 TB chili powder

1 tsp onion powder

¼ tsp cayenne pepper

½ tsp garlic powder

½ tsp pepper

1 TB olive oil

2 cloves garlic, minced

1 cup diced onion

1-8oz pkg light cream cheese


Heat oil & cook onions until tender, add garlic and cook for additional minute.

Set crock pot on low, add onion mixture and all other ingredients putting the cream cheese on top.

Cook 6-8 hours on low.

Before serving, shred the chicken using two forks, stir and enjoy!
