Scalloped Eggs and Ham Casserole

Ingredients

6 hard-boiled large eggs, peeled and sliced
1 cup chopped cooked ham
¼ c. chopped red bell pepper
2 cups jarred alfredo sauce, divided
1 tablespoon butter
1/3 cup Panko or soft bread crumbs
1/3 cup finely shredded Parmesan cheese
Chopped fresh Italian parsley


Instructions

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Lightly grease a 1-quart casserole. Layer half of the eggs, ham, and red pepper in the casserole dish. Top with 1 cup of alfredo sauce.
  3. Repeat layers.
  4. In saucepan, melt butter. Stir in panko and cheese. Evenly sprinkle over egg mixture in dish. Bake, uncovered for about 20 minutes or until it’s bubbly and the top is golden. If desired, sprinkle with parsley.
