Tomato Boursin Bruschetta


Bruschetta Ingredients:

  • 4 tomatoes
  • 1 can artichoke hearts, packed in water
  • 1 can hearts of palm
  • 1 jar roasted red pepper
  • 6 green onions
  • handful of fresh basil

Marinade Ingredients:

  • 2 T honey
  • ¾ cup balsamic vinegar
  • 1 cup olive oil
  • 1 T dry mustard
  • 1 clove garlic, minced
  • salt and pepper

Other Ingredients:

  • 2 Take and Bake baguettes
  • olive oil
  • 2 containers of herbed Boursin cheese



  1. Whisk together the marinade ingredients.
  2. Dice all the vegetables, and slice the green onions. Put into a large bowl, pour the marinade over, and set aside.
  3. Slice the baguettes into thin rounds, brush or spray lightly with oil, and season with salt and pepper.
  4. Bake at 400° for 10 minutes or until light brown, turn over and bake another 10 minutes. Take care not to burn them.
  5. To serve, place a round of Boursin cheese in the center of a large platter. Add half of the marinated vegetable mixture around the cheese and serve with crostini in a separate basket.

This is a huge recipe, so you can replace the vegetables or add the second round of Boursin cheese as they are consumed…because they will be. This is a crowd pleaser!
