Oatmeal Cake
Ingredients
Ingredients:
- 1 1/3 cups Boiling Water
- 1 cup Oatmeal
- ½ cup Shortening
- 1 cup Sugar
- 1 cup Brown Sugar
- 2 Eggs
Topping:
- ½ stick Oleo
- ½ cup Brown Sugar
- ¼ cup Milk
- 1 tsp. Vanilla
- 1 cup Packed Shredded or Flaked Sweetened Coconut
Instructions
Directions:
- Pour boiling water over oatmeal and let stand to cool.
- Add remaining ingredients and cream well.
- Sift together 1 1/3 C. flour, 1 tsp. cinnamon, ½ tsp. salt, ½ tsp. soda and ½ C. nuts (optional).
- Add oatmeal mixture to four and cream.
- Bake at 350° for 20-30 minutes in a 9x13-inch greased pan.
- Boil topping ingredients 3 minutes and add 1 C. coconut.
- Spread over cake.
