Oatmeal Cake

Ingredients

Ingredients:

  • 1 1/3 cups Boiling Water
  • 1 cup Oatmeal
  • ½ cup Shortening
  • 1 cup Sugar
  • 1 cup Brown Sugar
  • 2 Eggs

Topping:

  • ½ stick Oleo
  • ½ cup Brown Sugar
  • ¼ cup Milk
  • 1 tsp. Vanilla
  • 1 cup Packed Shredded or Flaked Sweetened Coconut

Instructions

Directions:

  1. Pour boiling water over oatmeal and let stand to cool.
  2. Add remaining ingredients and cream well.
  3. Sift together 1 1/3 C. flour, 1 tsp. cinnamon, ½ tsp. salt, ½ tsp. soda and ½ C. nuts (optional).
  4. Add oatmeal mixture to four and cream.
  5. Bake at 350° for 20-30 minutes in a 9x13-inch greased pan.
  6. Boil topping ingredients 3 minutes and add 1 C. coconut.
  7. Spread over cake.
