Chocolate Chip Muffins

- 2 c. all-purpose biscuit baking mix (Bisquick)
- ¼ c. sugar
- 1 egg
- 2/3 c. milk
- 1 c. semi-sweet chocolate (I prefer mini chips)

- Heat oven to 400 degrees.
- Grease or paper-line 12 (2 ½-inch) muffin cups.
- In large bowl, combine baking mix, sugar, egg and milk.
- Beat 30 seconds.
- Stir in chocolate chips.
- Fill muffin cups ¾ full with batter.
- Bake 15-17 minutes or until very lightly browned. Serve warm.
- (NOTE: My kids prefer these made in mini muffin tins; adjust baking time to about 8 minutes.)
